An autumnal smoothie bowl of a truly delicious kind.

We all know that apple and cake is a bomb combination, now what if we turned this into a smoothie bowl? And hear me out, what if we used a crunchy granola to top it off?


While admittedly this isn't a typical smoothie bowl, as it doesn't include banana or frozen fruit, it does include apple, yogurt, non-dairy milk, ginger, and the swelling power of psyllium husk (click here for my Psyllium Husk Porridge).

The advantage of psyllium husk: they don't stand out visually and you almost don't notice them while eating. If you don't like psyllium husks, you can use ground flaxseed instead. They bring a nuttier note, but you can also feel them in your mouth as "seeds".


So if you're into smoothie bowls and love a good piece of apple cake, I suggest you make this as soon as humanly possible. Trust me. You won't regret it!



APPLE CAKE SMOOTHIE BOWL



INGREDIENTS


  • 1 apple

  • 50 g coconut yogurt (or alternative)

  • 100 ml almond drink (or alternative)

  • 1 tsp nut butter

  • 2 tsp psyllium husks (or ground flax seeds)

  • 1 tsp cinnamon

  • 1/2 tsp ginger powder

  • 1 pinch salt



TOPPINGS




HOW TO MAKE IT


  1. Wash the apple and cut into slices. Set aside a few slices for the topping.

  2. Blend the remaining apple with the yogurt, almond drink and nut butter until creamy.

  3. Add psyllium husks (or alternatively ground flax seeds) for a more thick consistency.

  4. Add cinnamon, ginger and salt and decorate the bowl with the toppings.

  5. Enjoy!
